
What to Make with Zucchini
Is it just me, or is zucchini one of those things you buy and then look at a week later like… what should I do with you before you rot? It’s a shame, because there is so much to do with zucchini. You can make zucchini ice cream (yup that’s a thing), zucchini noodles, and – I think my favorite – zucchini fries! There are even zucchini festivals to celebrate these glorious veggies. So, let’s learn how to love them. For me, that starts with zucchini fries.

How to Make Vegan Zucchini Fries
These zucchini fries are vegan (surprise)! They are also really easy to put together. After coring and cutting the zucchini into a fry shape, you’ll want to sprinkle them with salt and let them sit for a bit. This will allow all the moisture to come to the surface of the zucchini that way you can pat it off with a towel. Doing this will help your toppings stick instead of slide off the zucchini.
Next, put together a spice blend and toss the zucchini in. You’ll notice a good portion of the spices sticking to the veggies, but don’t worry if there is a lot left over in the bowl – you can dump this on top of your zucchini before baking and it’ll stick while baking. If you don’t mind some oil, I like to use a sprinkling before popping them into the oven to help everything brown.
